Primavera Spring Vegetable Soup

A light and comforting spring vegetable soup made with seasonal vegetables, peas, and fresh parsley in a delicate savoury broth. Perfectly fresh, wholesome and full of flavour.

100g Butter

450g Carrots – small diced

400g Onions – small diced

450g Leek – small diced

375g Swede

375g Peas – frozen

20g Parsley

1.25g White pepper

50g Cornflour – mixed with a little water

6250g Water

200g Major Stock Base Paste

METHOD

  1. Melt the butter in a large pan.

  2. Add the vegetables and cook for 5 minutes.

  3. Add the stock paste and water.

  4. Simmer until vegetables are cooked.

  5. Stir in the peas and parsley cook for 5 minutes.

  6. Stir in the slaked cornflour and season with pepper.
