Primavera Spring Vegetable Soup

A light and comforting spring vegetable soup made with seasonal vegetables, peas, and fresh parsley in a delicate savoury broth. Perfectly fresh, wholesome and full of flavour.

40g Butter

180g Carrots – small diced

160g Onions – small diced

180g Leek – small diced

150g Swede

150g Peas – frozen

8g Parsley

0.5g White pepper

20g Cornflour – mixed with a little water

2500g Water

80g Major Stock Base Paste

METHOD

  1. Melt the butter in a large pan.

  2. Add the vegetables and cook for 5 minutes.

  3. Add the stock paste and water

  4. Simmer until vegetables are cooked.

  5. Stir in the peas and parsley cook for 5 minutes.

  6. Stir in the slaked cornflour and season with pepper.
