Spicy Pulled Pork & Mango Tacos
Soft grilled tacos filled with slow-cooked spicy pulled pork, topped with fresh mango, crunchy cabbage and radish, finished with lime and creamy mayo for a vibrant sweet and smoky flavour.

INGREDIENTS – 10 COVERS
20 Soft small tacos
Pulled Pork:
400g Shoulder of Pork – rind off
60g Major Pir Piri Mari Base
10g Maple syrup
80g White onion – peeled & cut in half
200g Water
120g Orange juice
Garnish:
80g Mayonnaise
10 Lime wedges
50g Radishes – sliced
100g White cabbage – shredded
120g Mango - julienne
METHOD
Marinate the shoulders in Major International Piri Piri Mari Base overnight.
Heat oven to 150°C.
Place onions in a roasting tin with the pork with marinade on top.
Pour water, maple syrup and orange juice around the pork and cover tightly with foil.
Place in the oven and cook for approx 4 hours, until the meat is pulling freely.
Drain the cooking liquor into a tall container and allow to stand. Skim off the fat then add to a pan and reduce by half.
Shred the pork with a fork whilst warm and then combine with the reduced cooking liquor.
Grill the tacos fold place on the pulled pork garnish with cabbage, radish, coriander and mango.
Serve with lime wedges.
