Spicy Pulled Pork & Mango Tacos
Soft grilled tacos filled with slow-cooked spicy pulled pork, topped with fresh mango, crunchy cabbage and radish, finished with lime and creamy mayo for a vibrant sweet and smoky flavour.

INGREDIENTS
50 Soft Small Tacos
Pulled Pork:
1000g Shoulder of Pork – rind off
150g Major Piri Piri Mari Base
25g Maple Syrup
200g White Onion – peeled & cut in half
500g Water
375g Orange Juice
Garnish:
200g Vegan Mayonnaise
25 Lime Wedges
125g Radishes – sliced
Coriander – as required
250g White Cabbage – shredded
300g Mango – julienne
METHOD
Marinate the shoulder in Major Piri Piri Mari Base overnight.
Heat oven to 150°C.
Place onions in a roasting tin with the pork with marinade on top.
Pour water, maple syrup and orange juice around the pork and cover tightly with foil.
Place in the oven and cook for approx 4 hours, until the meat is pulling freely.
Drain the cooking liquor into a tall container and allow to stand. Skim off the fat then add to a pan and reduce by half.
Shred the pork with a fork whilst warm and then combine with the reduced cooking liquor.
Grill the tacos, fold, place in the pulled pork garnish with cabbage, radish, coriander and mango.
Serve with lime wedges.
