Laksa Prawn Spaghetti

INGREDIENTS – 10 COVERS
50g Garlic purée
300g Red onion – diced
800g King prawns – deveined
200g Laksa Global Paste
2000ml Coconut milk
40g Major Lobster Stock
200g Smoked Tofu – diced
150g Vegetable oil
500g Cherry tomatoes
1500g Spaghetti – cooked
60g Red chilli – sliced
100g Spring onion – sliced
20g Coriander – chopped
10 Sautéed shell-on king prawns
METHOD
Toss the tofu in some cornflour and deep fry until golden
Heat the wok then add the oil and the garlic paste and red onion
Add the Major Laksa Paste and the king prawns, cherry tomatoes, Major Lobster Stock and add the coconut milk.
Re-heat the spaghetti - add to the pan and toss well. Finish with chilli, spring onion and coriander and top with a shell on prawn.
