Laksa Prawn Spaghetti

INGREDIENTS

125g Garlic Purée

750g Red Onion – diced

2000g Prawns – deveined

500g Laksa Global Paste

5000ml Coconut Milk

100g Major Lobster Stock

500g Smoked Tofu – diced

375g Vegetable Oil

1250g Cherry Tomatoes

3750g Spaghetti – cooked

150g Red Chilli – sliced

250g Spring Onion – sliced

50g Coriander – chopped

25 Sautéed Shell-on King Prawns

METHOD

  1. Toss the tofu in some cornflour and deep fry until golden.

  2. Heat the wok then add the oil and the garlic purée and red onion.

  3. Add the Major Laksa Paste and the king prawns, cherry tomatoes, Major Lobster Stock and add the coconut milk.

  4. Re-heat the spaghetti - add to the pan and toss well. Finish with chilli, spring onion and coriander, then top with a shell on prawn.
